Only 2 weeks of summer left :(

Well, we are down to our last 2 weeks of summer. My daughters start school on August 27th, and so do I. My fall semester at the University of Illinois at Springfield begins on the same say. It’s my 2nd to last semester, and I’m taking 3 graduate courses, yikes! I took 3 last fall, so I know I can handle it. I’m still looking for work, so this is my ‘job’.

I’ll be taking Sustainable Food Systems, so I am super stoked. I can’t wait to learn all about this. The other 2 are Paleoecology and a policy course for my concentration. I expect to post plenty of good things about sustainable food, throughout the semester.

On another note, my website (www.aresourcefulmom.com) is still a work-in-progress, but at least you can now access this blog from it 🙂

Homemade recipes to avoid soy by-products

I found some amazing homemade recipes for a few store-bought items that contain soy and soy by-products.

Soy is in everything….(and that’s NOT a good thing)

     I’ve been avoiding (at least I thought I was) soy since I was diagnosed with hypothyroidism in 2001. However, soy is in ALL processed foods, usually as soy lecithin. Soy is known to cause trouble for the thyroid, and 95% of soy grown in the US is genetically modified, meaning it has Round Up poison and the Bt toxin added to its DNA. So when you consume soy, you are consuming weed killer and toxins that are now part of these plants. No wonder we are all fat and sick. Go check your labels, you will be very surprised.
     Soybean lecithin comes from sludge left after crude soy oil goes through a “degumming” process. It is a waste product containing solvents and pesticides and has a consistency ranging from a gummy fluid to a plastic solid. (http://preventdisease.com/news/09/073009_soy_lecithin.shtml)

Convenience is killing us….

Wow, I didn’t realize how many products contain sugar. Mayonnaise, peanut butter, and pasta sauce have hidden sugar. I know I can make my own peanut butter and pasta sauce, but I’m not thrilled about making my own mayonnaise. My daughters are not happy with my new healthy eating kick, and one of them even blamed my Master’s degree program for ruining her life! But what teenager wants to follow their parent’s advice? None that I know of 🙂

I’m trying to slowly incorporate my new recipes to lessen the shock to my daughter’s systems, but it’s not easy. They keep finding cool desserts to make on Pinterest! It’s hard to compete with the internet 🙂

I love convenience, but convenience is killing us…
